Having worked in high end hospitality for many years, in front of house, working all the way from the bottom up. Adding nearly 15 years of cooking experience setting up new standards, taking our hospital to new heights, delivering food and service on the par with the very best 5* hotels in the country, exceeding our patients expectations, for an instant making them forget the purpose of their stay and transporting them to new horizon. I have made St Joseph's the first hospital in Wales to achieve the Soil Association Food for Life Bronze Award based on sustainability, freshly prepared food, additive free meal. Everyday at St Joseph I am developing new dishes, pushing the boundaries of hospital food towards new heights, step by step we move towards the end goal. I am keen to learn new skills as required and to develop myself and my team to grow and progress to be the best 5* hospital in Wales. As a decision maker and a strong leader but also a motivator, I respond flexibly to change and new situations. I have been responsible for the Haccp, Coshh and food hygiene training for the past 10 years consistently achieving the top Mark of 5 for our hygiene rating. Educated to level 5 in Management, Food hygiene to level 4 Having taken part in a pilot scheme aiming to provide the highest chef qualification a fantastic opportunity to educate the next generation of chefs. I am the first and currently the only one in the UK to attain the HIgher Apprenticeship and diploma in Professional Cuisine qualifcation
