Involved in PC meetings, Forecast for Outlets and Banquets, and Budget procedures as well.Responsible for Banquet and Catering/Conference Operation, managing a busy Incentive based Banquet Operation, with over $5.500.00,00 revenues in 2013 (over passing 2013 Budget numbers), and managing a very difficult Banquet Operation, were most functions are in open sky venues, either at the Resort and Off Property. Working together with the F&b team to manage the Outlets, when banquet periods are not so busy.Responsible for the Banquet and Conference Operation (about 50 % of the entire F. & B. budget), and working with the Director of F & B, responsible for the supervision and management of all F. & B. Outlets. Planning and organizing Schedules, Menu supervision and product control. Control all procedures of the complex Banquet and Conference operations, including On Call staff and labor control. Menu Engineering, Outside Catering development. Control, training and delivering Service Standards according to the FS quality of service.Responsible for the direct contact with companies / clients, in organizing Events and Conferences. Main responsibilities include Room Blocks management, Menu suggestions, Meeting room specifications including AV and set up. Conferences and Catering events up to 500 paxs, for companies such as Pharmaceuticals, Financial companies, Embassies and other institutions. Supervision of other Catering Events, including Outside Catering. Since beginning of 2009, directly involved with the F. & B. Director on the Outlets control and organization.Department Head, responsible for In Room Dining, Amenities and Private Bar, and as well all Coffee Breaks and Stations inside Meeting Rooms. Outlet management according to budget, responsible for the Amenities Program, and as well for the control of all Private Bars. Standards watch and service, and as well normal Human Resources duties.Working as Maitre D`is in the acclaimed Varanda Restaurant, experience in Breakfast, Lunch and Fine Dinning periods. Responsible for Standard Training, HAACP implementation, Human Resources procedures, requisitions, Purchase Orders and stock management.Responsible for the service of the u00c1 la Carte restaurant and the Lobby Bar, and as well Banquets, Meeting and Catering Events (especially weddings). Reporting directly to the GM, responsible for staff hiring and scheduling, stock management.
